- 2 tsp agar agar powder (not gelatin)
- 1 cup water
- 1 ½ cups granulated sugar
- A few drops of fruit juice or flavored extract (optional)
- Food coloring (optional)
- Edible glitter or gold flakes (optional for sparkle)
Instructions
- Prepare the mold tray: Lightly grease silicone molds or use a parchment-lined dish.
- Boil the mixture: Combine water and agar agar in a saucepan. Bring to a boil while whisking.
- Simmer and sweeten: Reduce to medium heat and stir in sugar. Keep stirring for 2-3 mins until fully dissolved.
- Color and flavor: Add coloring and extracts or juices. Divide the mixture for different colors.
- Pour and set: Pour into molds or a tray. Let sit at room temperature for 2–3 hours.
- Cut and dry: Remove from molds and cut into gem shapes. Place on a rack and let dry for 6–8 hours until a crunchy shell forms.
Notes
- Don’t substitute gelatin for agar if you want the signature crunchy texture.
- Store in a dry, airtight container to preserve the outer shell.
- Customize colors and shapes based on holidays (red/green for Christmas, hearts for Valentine’s Day).
