Description

This banana bread is the cozy classic you know and love: soft, moist, packed with real banana flavor, and delightfully simple. No mixer required, no fancy ingredients—just a few basics and some overripe bananas. Great for beginners, perfect for pros.


Ingredients

  • 2 to 3 ripe bananas (about 1 to 1.5 cups mashed)
  • 1/3 cup melted butter (or coconut oil for a lighter twist)
  • 3/4 cup sugar (feel free to reduce for less sweetness)
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1.5 cups all-purpose flour (gluten-free blend works too)

Optional Add-ins:

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup chocolate chips
  • 1/2 cup sour cream for extra richness

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, mash bananas until creamy.
  3. Mix in melted butter.
  4. Stir in sugar, egg, and vanilla.
  5. Sprinkle in baking soda and salt. Mix gently.
  6. Fold in flour just until combined—don’t overdo it.
  7. Add your mix-ins (nuts, chocolate chips, etc.).
  8. Pour batter into the loaf pan.
  9. Bake for 50–55 minutes. A toothpick should come out clean.
  10. Let cool 5 minutes, then transfer to a rack.

  • Chocolate cravings? Add chips and slightly reduce sugar.
