- 2 to 3 ripe bananas (about 1 to 1.5 cups mashed)
- 1/3 cup melted butter (or coconut oil for a lighter twist)
- 3/4 cup sugar (feel free to reduce for less sweetness)
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1.5 cups all-purpose flour (gluten-free blend works too)
Optional Add-ins:
- 1/2 cup chopped walnuts or pecans
- 1/2 cup chocolate chips
- 1/2 cup sour cream for extra richness
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, mash bananas until creamy.
- Mix in melted butter.
- Stir in sugar, egg, and vanilla.
- Sprinkle in baking soda and salt. Mix gently.
- Fold in flour just until combined—don’t overdo it.
- Add your mix-ins (nuts, chocolate chips, etc.).
- Pour batter into the loaf pan.
- Bake for 50–55 minutes. A toothpick should come out clean.
- Let cool 5 minutes, then transfer to a rack.

- Vegan? Swap in a flax egg and plant-based butter.
- Chocolate cravings? Add chips and slightly reduce sugar.
