For the Pudding:
- 3/4 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 tsp salt
- 3 large eggs, separated
- 2 cups whole milk
- 1 tbsp unsalted butter
- 1/2 tsp vanilla extract
For the Layers:
- 1 box Nilla wafers (or preferred vanilla wafers)
- 4 ripe bananas, sliced
- Whipped cream or meringue (optional)
Instructions
1. Make the Custard:
- In a medium saucepan, whisk together the sugar, flour, and salt. Gradually stir in the milk. Cook over medium heat until the mixture thickens, about 10 minutes.
2. Temper the Eggs:
- In a small bowl, beat the egg yolks. Slowly add a small amount of the hot mixture to the yolks, stirring constantly. Then pour the yolk mixture back into the saucepan.
3. Finish the Pudding:
- Cook for 2–3 more minutes until thick. Remove from heat, stir in butter and vanilla. Let cool slightly.
4. Prepare Optional Meringue:
- Whip the egg whites until soft peaks form. Add a tablespoon of sugar and continue beating to stiff peaks. This can be used as a topping or baked briefly to toast.
5. Assemble the Layers:
- In a trifle dish or 9×13 pan, layer wafers, banana slices, and pudding. Repeat, finishing with pudding.
6. Add the Topping:
- Top with whipped cream or meringue. Chill for at least 2 hours before serving.
