- 1 cup ground pistachios
- 1/2 cup ground almonds
- 1/2 cup unsalted butter, melted
- 1/4 cup brown sugar
- Pinch of sea salt
Custard:
- 2 cups whole milk
- 3 egg yolks
- 1/2 cup granulated sugar
- 2 tbsp cornstarch
- 2 tbsp rosewater
- 1/2 tsp ground cardamom
- 1 tbsp unsalted butter
Topping:
- 2 tbsp honey
- 1/4 cup crushed pistachios
- Dried rose petals (optional)
Instructions
1. Prepare the Crust
- Preheat your oven to 350°F (175°C).
- Mix the pistachios, almonds, melted butter, brown sugar, and salt until crumbly.
- Press the mixture into a tart pan, getting those edges nice and even.
- Bake for 10–12 minutes until golden and fragrant.
- Cool completely—it’s worth the wait.
2. Make the Custard
- Warm milk gently in a saucepan.
- In a bowl, whisk together egg yolks, sugar, and cornstarch.
- Slowly pour the warm milk into the yolks while whisking.
- Return the mix to the saucepan and stir constantly until thickened.
- Remove from heat. Stir in rosewater, cardamom, and butter.
3. Assemble the Dessert
- Pour the custard into your cooled crust.
- Cover and refrigerate for 4 hours or overnight.
4. Garnish & Serve
- Drizzle with honey.
- Sprinkle crushed pistachios and rose petals.
